Oat pancake with cheese

An oatmeal pancake is a combination of eggs and cooked oatmeal, making it much more filling than a regular egg pancake.

Step-by-step recipe

The oat pancake can be topped with lightly salted salmon, fried mushrooms, bacon or ham. Enjoy.

Step 1

Whisk 2 eggs in a deep bowl and mix well with a whisk until smooth.

Step 2

Add a little milk and salt to the liquid eggs and mix everything again until smooth.

Step 3

Pour 3 full tablespoons of rolled oats into the egg mixture. If the oatmeal has been simmering for a long time, leave the mixture for 10-15 minutes to allow the oats to swell. If the oatmeal cooks quickly, you can continue the cooking process.

Step 4

Pour the liquid mixture into a hot buttered frying pan and reduce the heat.

Step 5

Cover the oatcake with a lid and fry over low heat until cooked through. Be sure to flip it over so that it gets an even colour on both sides

Step 6

Place the cheese slices on one half of the oatcake and cover with the other half of the scoop. Turn off the heat. Leave covered for a few minutes.
